Smoked Salmon Parcels
Ingredients
2 hard-boiled eggs
125 g (4 oz) cream cheese
3 tablespoons double cream
2 teaspoons snipped chives
Salt and pepper
4 slices smoked salmon
Few whole chives
125 g (4 oz) mixed salad leaves
Toast, to serve
DRESSING
4 tablespoons olive oil
2 tablespoons lemon juice
½ teaspoon French mustard
Pinch of sugar

Serves: 4
Method
1. Finely chop the eggs and mix with the cream cheese, cream and chives in a bowl. Season with salt and pepper.
2. Lay the smoked salmon slices flat and divide cream cheese mixture equally between them. Roll or fold the smoked salmon slices to enclose the filling. Secure each parcel by tying together with whole chives and chill in the refrigerator, covered with plastic wrap, until ready to serve.
3. For dressing, put all the ingredients in a screw-topped jar and shake to combine. Season with salt and pepper.
4. Just before serving, put the salad leaves into a bowl, add dressing and toss together gently to combine. Arrange salad leaves on individual plates with the salmon parcels. Serve with toast.
