Blackberry and Champagne Crush

115g/6oz/1 cup blackberries, chilled
15ml/1 tbsp icing (confectionersí) sugar, to taste
30ml/2 tbsp brandy
250ml/8fl oz/1 cup Champagne or sparkling wine, chilled


Serves: 2


Put the blackberries in a food processor and process to a purée. Place a sieve over a bowl and press the purée through the sieve to remove the seeds, then sweeten to taste with the sugar. Pour the brandy into two glasses. Return the blackberry purée to the food processor, add the champagne or wine and blend for 2-3 seconds. Pour into the glasses and serve immediately.
