Honey, Orange and Almond Tagliatelle

Here's a really quick and easy dessert. Pasta tossed in butter and honey syrup makes a perfect pasta pudding.

225g/8oz dried egg tagliatelle
Dash of sunflower oil
4 oranges
75ml/5tbsp clear honey
25g/1oz soft light brown sugar
15ml/1tbsp lemon juice
40g/1Żoz butter
75g/3oz flaked almonds


Serves: 6


Bring a large saucepan of water to the boil and add the tagliatelle with a dash of sunflower oil. Cook for about 8-10 minutes, stirring occasionally, until tender. Drain and set aside.

While the pasta is cooking, peel and slice three of the oranges and cut the slices in half. Squeeze the juice from the remaining orange into a small saucepan. Add the honey, sugar and lemon juice. Bring to the boil, stirring to dissolve the sugar, and simmer for 1-2 minutes, until syrupy.

Melt the butter in a large frying pan and fry the flaked almonds until golden. Stir in the tagliatelle and honey syrup, heat through, then quickly stir in the orange slices. Serve immediately.

Pare strips of zest from the skin of one orange and cut into thin "julienne" strips for decoration.
