Tomato-Chilli Punch

450g/1 lb ripe tomatoes
1 small onion, finely chopped
1 small fresh chilli, seeded and chopped
120ml/4fl oz/ cup freshly squeezed orange juice
Juice of 3 limes
2.5ml/ tsp caster (superfine) sugar
Pinch of salt
250ml/8fl oz/1 cup golden or aged Tequila or vodka


Serves: 8


Cut a cross in the base of each tomato and place in a heatproof bowl. Pour over boiling water to cover and leave for 30 seconds. Lift the tomatoes out of the water with a slotted spoon and plunge them into a second bowl of cold water. The skins will have begun to peel back from the crosses. Peel off the skins, then cut the tomatoes in half and scoop out the seeds with a teaspoon. Chop the tomato flesh and put in a food processor or blender. Add the onion, chilli, orange juice, lime juice, sugar and salt. Process until the mixture is very smooth, then pour into a jug (pitcher) and chill for at least 1 hour before serving. To serve, add the tequila or vodka to the tomato mixture and stir to combine, then pour into eight glasses.
