75 ml/3 fl oz white rum
1 miniature bottle of orange-flavoured liqueur
Thinly peeled rind of 1 lemon
2 bottles claret or other red wine
3 bottles ginger ale
Ice cubes


Serves: 12


1 Put the rum and orange-flavoured liqueur into a small jug. Add the lemon rind, cover and leave to marinate for about 2 hours.

2 Pour the claret and ginger ale into a large howl, add the rum and orange flavoured liqueur mixture with the lemon rind and stir to mix. Add a handful of ice cubes and serve at once.

Preparation time: 10 minutes, plus marinating
