Christmas Shortbread

125 g/4 oz unsalted butter
50 g/2 oz caster sugar
150 g/5 oz plain flour
25 g/1 oz rice flour
Caster sugar, to serve


Makes: 12


1 Place the butter and sugar in a howl and cream together until fluffy. Sift in the flours and work to form a soft dough. Knead lightly until smooth.

2 Roll the dough into a log shape, wrap in clingfilm and chill for 30 minutes.

3 Cut the roll into slices and place on a greased baking sheet. Bake in a preheated oven, 180°C (350°F), Gas Mark 4, for 15-20 minutes until golden round the edges. Dredge with caster sugar and cool on a wire rack.
