Brussels Sprouts With Chestnuts

Brussels sprouts are a traditional accompaniment to roast turkey, but many people find them a little dull. This version gives the humble sprout a new lease of life.

1.5 kg/3 lb Brussels sprouts, trimmed
2 x 220 g/7 oz cans chestnuts, drained
Vegetable stock
25 g/1 oz butter
Salt and pepper


Serves: 10


1 Place the Brussels sprouts in a pan of boiling salted water. Cover and cook for 10-12 minutes until tender. Drain.

2 Put the chestnuts into a saucepan, add enough stock to cover, and heat gently until warmed through.

3 Drain the chestnuts, stir into the sprouts with the butter, and season.
