Bean Sprout Salad

This crunchy, fresh-tasting salad is very refreshing after all the heavy Christmas meals. It is very easy to prepare, and is ideal for vegetarians.

125 g/4 oz button mushrooms, thinly sliced
2 tablespoons French dressing
500 g/1 lb fresh bean sprouts or 2 x 410 g/13 oz cans bean sprouts, well drained
4 carrots, trimmed and cut into thin sticks
250 g/8 oz red cabbage, thinly shredded
3 cartons mustard and cress


Serves: 4


1 Put the mushrooms into a large salad bowl and pour over the French dressing. Toss lightly and leave to stand for 30 minutes.

2 Add all the remaining ingredients and toss well. Serve at once.

Preparation time: 20 minutes, plus standing
