Black Walnut Chicken Salad
2 cups chicken breasts, cooked and cubed
2 cups rotini, cooked per package
1 cup frozen asparagus, uncooked and cut into 1 inch pieces
1 cup red seedless grapes
1 cup Hammons Black Walnuts
2 Tbs. pimento pieces or slices
Makes 6, 1-cup servings.
Place these ingredients in a large bowl and toss gently. Set aside.
¾ cup salad dressing
¼ cup sour cream
1 Tbs. lemon juice
1 Tbs. honey
½ Tbs. Dijon mustard
1 tsp. curry powder
1/16 tsp. cayenne pepper
Salt & pepper to taste
Mix these ingredients well. Pour over the tossed salad and gently toss until all ingredients are covered with dressing. Chill for several hours and allow flavours to blend. Place on lettuce leaves to serve.
