Stir-Fried Spinach

450 g/1 lb fresh spinach
2 tablespoons vegetable oil
2 garlic cloves, lightly crushed
teaspoon salt
1 teaspoon sugar


Serves: 4


1. Separate the spinach into leaves - do not remove the stalks - and wash thoroughly in several changes of cold water. Drain well.

2. Heat the oil in a wok over high heat. When the oil is hot, add the garlic and salt. Stir a few times until fragrant, then add the well-drained spinach. Stir constantly until the spinach begins to wilt, then add the sugar and continue stirring until the spinach is well wilted, about 1-2 minutes. Spread on a shallow platter and serve immediately.
