Sesame Honey Fritters

Ingredients

2 teaspoons (7g) dried yeast
1 teaspoon sugar
⅓ cup (80ml) warm water
cup (110g) plain flour
teaspoon salt
cup (110g) sesame seeds, toasted
1 cups (185g) plain flour, extra
cup (60ml) vegetable oil
2 tablespoons white wine vinegar
1 tablespoon orange flower water
1 egg yolk
50g butter, melted
Vegetable oil for deep-frying
2 cups (500ml) honey
cup (35g) sesame seeds, toasted, extra

Method

1. Combine yeast, sugar and water in small bowl, cover; stand in warm place about 10 minutes or until frothy.


2. Sift flour and salt into medium bowl, add yeast mixture, mix to a firm dough. Knead dough on floured surface about 10 minutes or until smooth and elastic. Place dough in oiled bowl, cover, stand in warm place about 1½ hours or until dough has doubled in size.


3. Blend or process seeds until finely crushed, place in large bowl with extra sifted flour, oil, vinegar, orange flower water, egg yolk and butter; mix well.


4. Add sesame mixture to yeast mixture, mix to a soft dough. Knead dough on floured surface about 10 minutes or until smooth and elastic.


5. Roll tablespoons of dough into 16cm sausages, cut each in half. Press 2 ends together, twist shapes, press ends together; repeat with remaining dough. Place twists on trays, cover, stand in warm place about 30 minutes or until nearly doubled in size.


6. Deep-fry fritters in hot oil in batches a few minutes or until browned all over; drain on absorbent paper.


7. Add honey to medium heatproof bowl, place bowl over pan of simmering water. Place hot fritters in warm honey in batches; stand 5 minutes. Drain on wire rack over tray, sprinkle with extra seeds. Serve cold.

Recipe can be made 3 hours ahead.
