Yellow Split Pea Dip

Ingredients

Makes about 3 cups (875ml).

1 cup (200g) yellow split peas
1 litre (4 cups) water
2 cloves garlic, bruised
1 medium (150g) onion, chopped
1 large (300g) potato, chopped
⅓ cup (80ml) olive oil
teaspoon ground cumin
teaspoon ground coriander


Method

1. Rinse peas thoroughly under cold water; drain. Combine peas, water, garlic and onion in pan, simmer gently, uncovered, about 35 minutes or until peas are very soft.


2. Boil, steam or microwave potato until tender, drain. Mash potato until smooth.


3. Blend or process pea mixture until smooth. Transfer to medium bowl, add potato, oil and spices; mix well. Drizzle with a little olive oil, serve warm or cold with Turkish bread, lemon wedges and olives, if desired.

Recipe can be made a day ahead.
Storage: Covered, in refrigerator.
Freeze: Not suitable.
Microwave: Potato suitable.
