Turkey Balsamico

Ingredients

2 level tablespoons plain flour
Freshly ground black pepper
4 turkey breast escallops, each about 4oz (115 g), beaten out very thin
3 tablespoons olive oil
2 large red peppers, de-seeded and cut into strips
3 cloves garlic, peeled and crushed
oz (15 g) fresh basil, chopped, or 1 teaspoon dried basil, crumbled
2 tablespoons balsamic vinegar
Basil sprigs to garnish

Method

1. Combine the flour and pepper on a plate and press the turkey escallops into the mixture, turning to coat them evenly all over and shaking off any excess.


2. Heat 2 tablespoons of the oil in a large, heavy-based frying pan and fry the escallops in it over a moderate heat for 2-3 minutes on each side. Lift them onto a heated dish and keep hot.


3. Add the remaining oil to the pan along with the red peppers and garlic. Reduce the heat and simmer for 5 minutes, stirring occasionally, until the peppers are tender.


4. Stir in the basil and vinegar and raise the heat to moderate, Put the turkey back in the pan and cook, stirring, for 2 minutes. Arrange the escallops on a hot serving dish, pour on the sauce and garnish with the sprigs of basil.


Tagliatelle or spaghetti are unusual companions for turkey, but they go surprisingly well with these Mediterranean flavours. Serve a green- bean salad on separate plates.
