Chocolate And Black Cherry Ice Cream

Preparation time: 10 minutes, plus freezing
Cooking time: 5 minutes

100g (4oz) plain chocolate, broken into pieces
1 tablespoon milk
1 x 175g (6 oz) can evaporated milk, chilled
50g (2oz) icing sugar
2 tablespoons black cherry jam
Fresh cherries. to decorate


1. Put the chocolate and the milk in the top of a double boiler or a heatproof bowl set over a pan of hot water and allow to melt gently.

2. Pour the evaporated milk into a medium bowl and whip until it forms soft peaks. Sift the icing sugar and whisk it in, then stir in the black cherry jam and the melted chocolate.

3. Transfer the mixture to a freezer container and freeze until firm without further beating. Serve in individual glasses decorated with fresh cherries.

Chef’s Tip:- Can be frozen for 3 months.
