Orange And Passion Fruit Granita

Preparation time: 5 minutes, plus freezing

1 x 175ml (6 fl oz) carton frozen orange and passion fruit concentrate
4-6 teaspoons Grenadine


Serves: 5


1. Pour the concentrated fruit juice into a freezer container and make it up with 2 cartons of cold water, rather than the 3 cartons recommended on the label. Freeze until almost hard.

2. Tip the frozen juice into a roasting tin and, using a metal fork, break it up into small pieces. Spoon the crystals into a freezer bag, fasten, and return to the freezer until required.

3. To serve, first chill 4 tall glasses in the refrigerator for about 15-20 minutes, then spoon some of the frozen crystals into each glass and top each portion with 1 teaspoon of Grenadine.

Chef’s Tip:- Can be frozen for 2 months.
