Banana Ice Cream With A Hint Of Raspberry

Preparation time: 10 minutes, plus freezing

Ingredients

3 large, ripe bananas
1 tablespoon lemon juice
1 tablespoon raspberry jam, sieved
1x 175g (6 oz) can evaporated milk, chilled
25g (1 oz) caster sugar
A few fresh raspberries, to decorate

Method

1. Purée or mash the bananas until smooth and put them into a bowl. Add the lemon juice and raspberry jam and mix thoroughly.


2. Whip the evaporated milk until it forms soft peaks. Whip in the sugar and fold into the banana mixture. Transfer the mixture to a freezer container and freeze until firm without further beating. Serve in individual dishes and decorate with fresh raspberries.

Chef’s Tip:- Can be frozen for 1 month.
