Lime Cordial Ice Cream

Preparation time: 10 minutes, plus freezing
Cooking time: 15 minutes

2 tablespoons granulated sugar
2 tablespoons lemon juice
3 tablespoons lime cordial
2egg yolks
300 ml (˝ pint) double or whipping cream
Slices of lime, to decorate


Serves: 5


1. Put the granulated sugar and the lemon juice in a heavy-based pan and stir over a gentle heat until the sugar dissolves, then bring to the boil without stirring and boil to soft ball stage, 113°C/235°F on a sugar thermometer.

2. Add the lime cordial, stir, and continue to boil until the mixture is syrupy.

3. Meanwhile, beat the egg yolks in a bowl, then pour on the hot syrup, a little at a time, beating continually until the mixture is cool, thick and creamy. Transfer the mixture to a freezer container.

4. Whip the cream and fold it in. Cover and freeze until firm without further stirring. Serve in individual dishes and decorate with slices of lime.

Chef’s Tip:- Can be frozen for 6 months.
