Fluffy Marshmallow


oz. (1 envelope) unflavoured powdered gelatine
4 tablespoons (⅓ cup) cold water
4 oz. ( cup) sugar
7 oz. (⅔ cup) glucose syrup (light corn syrup)
teaspoon vanilla essence
Icing (confectioners') sugar


Makes: 64


Sprinkle the gelatine over the cold water in a large heat resistant bowl. Cook on HIGH for about 45 seconds until the gelatine dissolves.

Stir in the sugar and heat briefly until dissolved, then add the syrup and vanilla essence. Beat with an electric mixer for about 15 minutes or until the mixture is very thick and resembles marshmallow.

Turn into an 8 inch square tin, generously coated with icing sugar. Leave to stand at room temperature for about 1 hour until set.

Turn onto a board, sprinkled with plenty of icing sugar and cut into 1 inch squares with a knife dipped in cold water. Toss marshmallows in icing sugar.
