Hot Apple Slaw With Ham


4 tablespoons (⅓ cup) vinegar
1 oz. (2 tablespoons) sugar
1 teaspoon celery seeds
1 teaspoon salt
1 small red dessert apple, washed but not peeled
1 lb. (6 cups) cabbage, shredded
1 oz. (2 tablespoons) butter
8 thin slices ham
4 tomatoes, quartered


Serves: 4


Combine the vinegar, sugar, celery seeds, salt and 3 tablespoons (¼ cup) water in a large heat resistant bowl. Cut the apple into quarters, core and thinly slice. Add to the bowl with the shredded cabbage. Dot with butter, cover and cook on HIGH for 4-5 minutes until heated through. Leave to stand, covered, for 3 minutes, then toss. Serve on a platter surrounded by rolled slices of ham and quartered tomatoes.
