Oven-Baked Aubergines With Feta Cheese

Ingredients

2 large aubergines halved lengthways 200 grams feta cheese
3 large tomatoes chopped in a liquidiser
2 soup spoons parsley, finely chopped
1 clove garlic, finely chopped
4 soup spoons extra virgin olive oil
Salt and black pepper


Method

Halve the aubergines lengthways and leave in a colander with plenty of salt for half an hour. Then rinse and dry them. Fry the aubergines, drain them and drizzle them with vinegar. Put them on a baking tray and cover with the tomatoes. Sprinkle over the garlic, parsley and crushed cheese. Pour the olive oil on top. Bake in the oven for 25 minutes.
