Maple Walnut Pie

3 eggs
⅛ teaspoon salt
cup granulated sugar
4 tablespoons butter or margarine, melted
1 cup pure maple syrup
1 cup walnuts, chopped
Whipped cream, for decorating


cup all-purpose flour
cup whole-wheat flour
⅛ teaspoon salt
4 tablespoons cold butter, cut in pieces
3 tablespoons cold shortening, cut in pieces
1 egg yolk
2-3 tablespoons ice water


Serves: 8


1. For the crust, mix the flours and salt in a bowl. Add the butter and shortening and cut in with a pastry blender until the mixture resembles coarse crumbs. With a fork, stir in the egg yolk and just enough water to bind the dough.

2. Gather into a ball, wrap in wax paper, and refrigerate for 20 minutes.

3. Preheat the oven to 425F.

4. On a lightly floured surface, rollout the dough about ⅛ inch thick and transfer to a 9 inch pie pan. Trim the edge. To decorate, rollout the trimmings. With a small heart shaped cutter, stamp out enough hearts to go around the rim of the pie. Brush the edge with water, then arrange the dough hearts all around.

5. Prick the bottom with a fork. Line with crumpled wax paper and fill with pie weights. Bake 10 minutes. Remove the paper and weights and continue baking until golden brown, 3-6 minutes more.

6. In a bowl, whisk the eggs, salt, and sugar together. Stir in the butter or margarine and maple syrup.

7. Set the pie shell on a baking sheet. Pour in the filling, then sprinkle the nuts over the top.

8. Bake until just set, about 35 minutes. Cool on a rack. Decorate with whipped cream, if wished.
