Kata´fi

Ingredients

1 kilo of ready-made kata´fi pastry
500 grms of almond kernels
1 Ż tablespoonfuls of cinnamon
2 tablespoonfuls of crushed rusk
2 cups of buttermilk

For the syrup:

1 Ż kilos of sugar
4 glasses of water
The juice of 1 lemon
Vanilla


Method

Pound the almonds and mix with the cinnamon and the crushed rusk. Coat a baking tin with butter. Take one piece of the pastry and spread it on it one tablespoonful of the mixture. Roll it up into a sausage roll shape and place in the baking tin. Continue in the same way with the rest of the pastry and when all of them are rolled up, put the butter on to heat. When it has melted sufficiently, pour it over (1 full tablespoonful) each roll. Allow the rolls to bake in a moderate oven for 40-50 minutes until lightly browned. Allow to cool, then prepare the syrup. Boil the sugar with the water, add the vanilla and the juice of the lemon and then pour it slowly over the rolls.
