1 kilo of small, slim, green peppers
4 village sausages, from Pelion if possible, otherwise a very spicy variety
1 kilo of ripe tomatoes
2 onions, finely chopped
1½ cups of oil
Salt, pepper, a little sugar


Serves: 7


Wash and drain the peppers. Fry them in 1 cup of oil to brown well. Remove them from the frying pan and fry the sausages, which have been finely sliced. After having fried them well, remove from pan and add.to the pan the rest of the oil.

Then add the tomatoes, having skinned and crushed them beforehand, the onions, very little salt and even less sugar. Allow this sauce to simmer for about 20 minutes. Add the peppers and the sausage and continue to simmer for a while longer till a thick sauce has formed.

The sausages may be cooked whole, if preferred, and in this way will be more tender.
