Citrus Avocado Pesto
Works as a wonderful vegetable dip for chips, crackers, bread, or crudité.
3 medium, very ripe avocados, peeled, pitted, and chopped
2 tablespoons fresh lemon juice
1 tablespoon fresh orange juice
1 tablespoon fresh lime juice
3 cloves garlic, minced
1 cup packed fresh cilantro leaves
1 teaspoon sea salt
1. Combine the avocados, lemon juice, orange juice, lime juice, garlic, cilantro, and salt in a blender and blend until smooth.
2. Store in a glass container with plastic wrap pressed closely to the top of the pesto to prevent browning.
Yield: 2 Cups
