Flan Recipe


Not too long ago there was a really good, easy-to-make fruit flan recipe on this site. Does anyone have it? It made the perfect sponge cake. Very delish!

Fresh Fruit Flan


50 mins preparation,
20-25 mins baking, plus cooling
Serves 8-10

Ingredients:-
4 eggs
100g (4oz) caster sugar
100g (4oz) plain flour sifted

Filling:-
200ml (7floz) crème fraiche
1-2 tbsp almond liqueur
142ml (5 fl oz) pot of double cream
2 tbsp caster sugar
3 -4 peaches, sliced
100g (4oz) raspberries
2 tbsp blueberries

1 Preheat oven to 190C/375F/ gas 5. Grease and lightly flour a 27-30cm (11-12in) raised- base, fluted flan tin.

2 Put the eggs and sugar in a large mixing bowl. Beat with an electric whisk until thick, creamy and tripled in volume.

3 With a spatula, carefully fold in the flour, using a figure-of- eight action. Turn into the prepared tin and tilt to level the surface.

4 Bake for 20-25 minutes, or until firm to the touch. Turn out onto a wire rack to cool completely.

5 Blend together the crème fraiche and almond liqueur.

6 Whip the double cream and caster sugar together until the mixture starts to form soft peaks. Whisk into the creme fraiche mixture.

7 Spread the cream mixture over the base of the flan. Arrange the peach slices around the edge. Place the raspberries and blueberries in the centre. Serve immediately.

Cook's Tips

To glaze the fruit, heat 3 tbsp apricot jam with 1 tbsp water
until warm. Brush evenly over the fruit.
