狸そば




I made this bowl of Tanuki Soba (狸そば). This is a low-fat nearly-vegetarian dish. The only animal product in it is the dashi (だし) which can be substituted with mushroom stock if you can't have fish. What follows is my own recipe. I retain intellectual property rights to it, and I grant a limited license to use it for non-business purposes.

Components:

Cooked and rinsed inaka soba (田舎そば)
2 oz mung bean sprouts
3" green onion, cut into slivers
2 thinly sliced radishes or 2oz grated daikon
1/3lb fried firm tofu cubes that were soaked in kakejiru
3oz Fresh spinach chiffonade
hot Kakejiru* to cover noodles

Pile all the components in the bowl being careful to show each ingredient and pour on the hot Kakejiru. It will warm the other food in the bowl. If you need it hotter, then use a thick clay bowl which has been preheated and wait for the contents to come to temperature. This is also good cold.

*Kakejiru
6 cups of Dashi (a stock made of smoked tuna, tons of recipes online)
1oz regular Japanese soy sauce
1oz Tamari Shoyu
1oz Gekkaikan Sake
2oz by weight, Korean black sugar (It is a very dark-brown sugar with a certain desirable flavor.)

Simmer in a steel or enamel saucepan, stirring, until sugar is dissolved.
